Stefano Lubiana Collina Chardonnay is produced only in the best years, when fruit quality is exceptional. It is entirely single vineyard, estate grown.
The certified biodynamic vineyard grows on grey gravelly loams over clay. Its fruit is handpicked in the cool of the day and delivered just 200 metres to the winery.
After hand sorting, the grapes are whole bunch pressed to tank. The juice – excluding the hard pressings, which are made into brandy – is then decanted to barrel for natural fermentation in the winery's underground cellar.
The wine is inoculated to complete malolactic fermentation. Only the barrels that best capture Stefano Lubiana's Chardonnay style are chosen for the final blend.
Pale straw, Stefano Lubiana Collina Chardonnay is a wine of finesse, focused more on minerality than fruit. It has linear natural acidity and long length.
A benchmark cool climate Chardonnay. Cellaring potential is 10 years.
